Dukan Diet Recipes – Dukan Diet Mayonnaise

The Dukan Diet Mayonnaise is a great low carb substitute which only uses half of an egg yolk per serving making it low in cholesterol too!


There are a couple of ways of preparing the mayonnaise. One using raw egg yolks (the official method) and the other which uses hard boiled eggs. I’ve not tried the hard boiled egg recipe but I decided to include both recipes as I know that some people have to avoid raw egg products.

The thing I love about the mayonnaise is that I feel as if I’m eating something I shouldn’t but I know that I can! You can also change the flavor by adding different ingredients such as:

  • Crushed Garlic
  • Worcestershire Sauce
  • Tabasco Sauce
  • Paprika
  • Chopped Chives
  • Chopped Parsley
  • Curry Powder

I like to eat the mayonnaise with fish but I also like it with burgers, or spread on a piece of Dukan Diet Toast.  I also put a little paprika or chopped chives or parsley on top of the mayonnaise if serving on a plate to add some more color.  It is surprising how much difference a little touch like this can make to how your meal looks.

Dukan Diet Mayonnaise (Using raw egg yolk) (2 servings)

Ingredients

  • 3 tablespoons of zero fat quark or  fromage frais
  • 1 tablespoon of  Dijon Mustard
  • 1 Egg Yolk
  • Sea Salt and Freshly Ground Black Pepper

Method

  1. Put your egg yolk in a bowl and beat gently.
  2. Add the Dijon mustard, sea salt, black pepper and any other flavoring of your choice and mix in well.
  3. Add the quark or fromage frais a little bit at a time stirring continously until all the ingredients are combined.
  4. Store in the refrigerator.

 

Dukan Diet Mayonnaise (Using hard boiled eggs) (2 servings)

Ingredients

  • 3 tablespoons of zero fat quark or  fromage frais
  • 1 tablespoon of  Dijon Mustard
  • 1 Hard Boiled Egg
  • Sea Salt and Freshly Ground Black Pepper

Method

  1. Sieve the egg yolk and the egg white separately into a bowl.
  2. Mix in the mustard and seasonings.
  3. Add the quark or fromage frais a little bit at a time stirring continously until all the ingredients are combined.
  4. Store in the refrigerator.

        Quark and fromage frais are not cottage cheese. Very different.

    I made the mayonnaise using organic raw egg yoke and I must say it is delicious! I added a splash of Lee & Perrins Worcestershire sauce to mine and had it with a sirloin steak with all fat cut off. It wasn’t dissimilar to a Bearnaise sauce. I’ll be making this again tomorrow and pouring it over my fish with chopped dill instead of the sauce.
