Dukan Diet PV Recipe: Ruth’s Chicken Layer Dish

As you probably guessed from the title of this post, this recipe isn’t one of mine but it is one that has been sent to me to share with you all by Ruth and she has even provided some great pictures too! The dish looks so tasty it makes my mouth water just looking at the photographs. Thank you so much Ruth for sharing.

The recipe is only suitable for PV days  because of the vegetables used.

Ruth’s Chicken Layers with Aubergines and Zucchini (Courgette – UK)

INGREDIENTS
You will need to make 2 big portions:
  • 1 medium chicken breast
  • 1 aubergine
  • 1 zucchini (courgette)
  • 1 finely diced garlic clove
  • 2 tbsp fat free yogurt
  • 3 tbsp of fat free cottage cheese
  • 2 tbsp of soft tofu
  • 1 tsp grated ginger (or 1 tbsp of bought ginger cream, no sugar added)
  • Any type of spice you like: Ruth likes to use  pepper, oregano and rosemary
  • Your daily30 g  allowance of 7% or less fat cheese or cubes of firm tofu
Please note Ruth does not use any oil as she uses oven paper that can be used to avoid things get attached or burned into the pan.  She thinks it’s fabulous and buys her oven paper in Poundland
PREPARATION
  1. Prepare a marinade in a bowl from
    • 1 finely diced garlic clove
    • 2 tbsp fat free yogurt
    • 3 tbsp of fat free cottage cheese
    • 2 tbsp of soft tofu
    • 1 tsp grated ginger (or 1 tbsp of bought ginger cream, no sugar added)
    • Your chosen spices
  2. Cut your chicken breast in to thin slices and place in the marinade overnight in the refrigerator.
  3. Early the next day cut the aubergine into  thin slices.   Note: Aubergines contain lots of water: the best way to make them lose water is the sprinkle salt on top of the slices and put something heavy on top such as  a big pot with lots of water.  The water will come out after a couple of hours and this stops you having to cook the dish for a long time till the water is evaporated.
  4. When ready to assemble the dish thinly slice the zucchini.
  5. Place the oven paper in your dish.
  6.  Take out the chicken from the fridge and start layering the vegetables with the chicken and marinade and when you reach the top you can sprinkle on your daily allowance of 30 g 7% cheese. Ruth uses the lightest Philadelphia and sprinkles it in small “teaspoon drops” all over the top. She has also put on top some firm tofu cut in cubes.
  7. Bake in the oven at  350°F/180°C /Gas Mark 4 till golden: both chicken and vegetables will cook quite quickly but leave it in the oven till top is golden!
