Dukan Diet Attack Phase Recipe:Zesty Lemon Dukan Pancakes

This is another recipe that I’ve been able to share with you all due to the generosity of another visitor to my site, Mrsj2008.

The recipe does use lemon juice and some lemon zest and it is important to remember that you can use lemon juice to cook with, but you that you are not supposed to have any lemon flesh or lemon juice by itself even without any added sugar.  This is

“because although sour, lemons are still a source of sugar and are therefore incompatible with the programme’s first two phases, the Attack and Cruise phases.”

Here is an extract from the Online coaching chat of 30 October 2011 which confirms that a little bit of lemon juice is OK to use.
Q: Hi, I managed to sort out the pancakes eventually. I just wondered if I can have them with Splenda  and lemon juice ?
A : That’s great! Yes you can have it with some Splenda and a very little drop of lemon as a seasoning. Bon appetit!

Lemons are however a very nutritious fruit and just by adding some zest and a little lemon juice, we must be providing ourselves with some health benefits as well as providing ourselves with a different taste experience.  This is because lemons are high in vitamin C (ascorbic acid) and also contain various phytochemicals, as well as many other minerals and vitamins.  These nutrients make lemons antioxidant and anti-inflammatory and a great booster for our immune system.

Mrsj2008’s Zesty Lemon Dukan Pancakes


  • 1 tablespoon of Oat Bran
  • 2 tablespoons of Splenda
  • 4 tablespoons of fat free plain Yogurt or Fromage Frais
  • 1 Egg
  • 1 Egg White
  • Zest and juice of half a Lemon


  1. Beat  the egg and egg white together in a bowl
  2. Add the oat bran, Splenda, yogurt or fromage frais, lemon zest and juice and mix well.
  3. Add a few drops of oil to a non-stick frying pan and wipe with a paper kitchen towel.
  4. Add some of the mixture to the pan and cook on a medium heat until bubbles have formed on top of the pancake.
  5. Turn the pancake and continue to cook until nicely browned.
  6. Repeat until the mixture has been used.
This recipe can make 4 small pancakes of about 8″ each and the pancakes can be eaten hot or cold.  If you don’t mind bending the rules a little you could sprinkle with a little lemon juice and Splenda to serve!

    Hi Amber,

    I am on day 43 of the diet and 37 of the cruise phase and have lost 8.3kg so far without cheating. I was invited out for dinner and to avoid temptation I ate before at home and had just two cups of black tea during the dinner. The only problem is that the tea had unsweetened lemon juice instead of milk and I feel gutted because I have just read that it is not allowed. Will this set me back?

      A small amount of lemon juice in two teas is not going to set you back. Congratulations for avoid temptation.

    Hi there – I just had a blood test done and all.seems fine -I want to start the diet but I am a bit worried -I heard of protein poisonjng -I am sure itnisnt common but still … I really need to lose 10kg I am working out a lot but have not seen much results … I am using some of the dukan recipes here and there … but not following it too strictly

      Hi Elif

      If you are well, as your blood tests indicate, following the Dukan is unlikely to cause you any health problems. Protein poisoning is certainly not that common and usually occurs when there is impaired kidney function.

    Just a note to add to this about the burning issue.

    If anyone has a sandwich maker that has flat surfaces you can make pikelets & pancakes on this. If you put the top of the toaster down it will flatten them like crepes, but if you leave it open they make the best round pancakes/pikelets.

    I’ve found a way to lessen the burning/sticking issue. It’s the lemons that cause the problem. A way to avoid is to mix everthing together except the lemon juice/zest and only add these once it’s in the frying pan (on one side only).

    Good luck everyone and keep up the hard work… i’m finally heading into the 2nd half of phase 3 and sooooo happy with the results. I’ve lost 1stone and my hubby 2!!!

    Hi Amber

    I just tried the Lemon Pancake Recipe using 2 drops of pure essential Lemon Oil and I think i may have just had the best, most fragrant breakfast I’ve ever eaten on a diet! It was also easier than grating lemon peel and juicing a lemon and less carbs too.

    I’m so glad I found your site, it inspired me to get the book and now I come back here for the recipes and practical advice. Thank you!

    I’m only on day 3 of Attack, lost almost 3 pounds, and finding it so easy and not hungry. I’m looking forward to trying the muffin recipes next.

    We can’t get them to work – they keep burning… the mixture is quite runny and won’t stick together. Help! We so want to try this!

      Hi the girls

      If they are burning you need to turn the heat down but I do know that one of the Dukan coaches also struggles to make the Dukan pancakes and her solution to this was to cook them in the oven. You can make the mixture less runny by adding less yogurt and if you are not in Attack you could add a tablespoon of corn flour/corn starch to the mix.
