Dukan Diet Recipes – Salad Dressings and Vinaigrettes

Salad dressings and vinaigrettes are really indispensible on the Cruise Phase as they add another dimension of taste to your salads. As you can only have salad on PV days there is an additional ingredient which you can use in your recipes which I had never thought of using before and that is tomato juice. Other ingredients that you can use are lemon juice, various vinegars, Dijon mustard, garlic, herbs, spices, salt and pepper, sweetener and zero fat yogurt and cottage cheese.  Once made the dressings will keep well in the refrigerator for a few days.

I’ll start by providing the recipe that I use for dressing from the Dukan Diet book which actually uses oil.  It is virtually the same as the book except that I use olive oil and omit the salt.

Maya’s Vinaigrette


  • 5 tablespoons of balsamic vinegar
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of olive oil
  • 1 peeled clove of garlic (optional)
  • 1 tablespoon of fresh chopped basil
  • Pepper


  1. Put all of the ingredients except for the garlic clove and pepper in a clean glass jar with a screw on lid and mix throughly.
  2. Season with pepper to taste.
  3. Add garlic clove to jar if used where it will release its flavor into the vinaigrette.

Zesty Lemon Vinaigrette


  • 2 tablespoons of  lemon juice
  • 2 tablespoon of white wine vinegar.
  • 1 teaspoon of Dijon mustard
  • Freshly ground black pepper
  • Sweetener to taste


  1. Use the same method as for Maya’s Vinaigrette adding the pepper and sweetener at the end to taste.

Zesty Yogurt Dressing


  • 2 tablespoons of zero fat yogurt
  • 1 teaspoon lemon juice
  • 1 tablespoon of chopped fresh herbs ( usually use flat leaf parsley and a little mint)
  • Freshly ground black pepper


As above

Spicy Tomato  Dressing


  • 4 tablespoons of tomato juice
  • 1 tablespoon of balsamic vinegar
  • 2 teaspoons of Worcestershire sauce
  • 1 teaspoon of Dijon mustard
  • Sweetener/cayenne pepper/dry chili flakes to taste

    I’ve been making the following dressing for years. Fabulous over any lettuce salad

    1 tsp oil (I prefer EV olive)
    1 tsp splenda
    pinch blk pepper (or Mr. Flavor)
    tiny pinch dry mustard powder
    2 TB vinegar

    Hi there,

    Your site is absolutely amazing, I have to say for anyone on this diet especially as seems so many thing are not included in the books. I have not been able to find this answer online anywhere and hoping you can help. Many of the salad dressing recipes are based on balsamic vinegar as I know this is ofcourse better that many oils out there. What is odd to me is I never noticed how much sugar most balsamic vinegars have so seems crazy that all the recipes allow 5 tablespoons? I am wondering how that much sugar is allowed considering staying away from sugar seems to be so vital when dieting?

      Hi Diana

      The calories in balsamic vinegar are quite low so I think this is why Dr Dukan has not forbidden this type of vinegar. I also think that he does try to make rules as simple as he can (although it doesn’t always feel like it) so rather than allowing some types of vinegar and not others he has allowed all provided they do not have any added forbidden ingredients. Another reason might be that Dr Dukan believed that most people would not be eating large quantities of this food.

      Sugar isn’t totally banned as dairy products all also contain naturally occurring sugar from lactose in the milk.
