Dukan Diet Recipes – Salad Dressings and Vinaigrettes
I’ll start by providing the recipe that I use for dressing from the Dukan Diet book which actually uses oil. It is virtually the same as the book except that I use olive oil and omit the salt.
Maya’s Vinaigrette
Ingredients
- 5 tablespoons of balsamic vinegar
- 1 tablespoon of Dijon mustard
- 1 teaspoon of olive oil
- 1 peeled clove of garlic (optional)
- 1 tablespoon of fresh chopped basil
- Pepper
Method
- Put all of the ingredients except for the garlic clove and pepper in a clean glass jar with a screw on lid and mix throughly.
- Season with pepper to taste.
- Add garlic clove to jar if used where it will release its flavor into the vinaigrette.
Zesty Lemon Vinaigrette
Ingredients
- 2 tablespoons of lemon juice
- 2 tablespoon of white wine vinegar.
- 1 teaspoon of Dijon mustard
- Freshly ground black pepper
- Sweetener to taste
Method
- Use the same method as for Maya’s Vinaigrette adding the pepper and sweetener at the end to taste.
Zesty Yogurt Dressing
Ingredients
- 2 tablespoons of zero fat yogurt
- 1 teaspoon lemon juice
- 1 tablespoon of chopped fresh herbs ( usually use flat leaf parsley and a little mint)
- Freshly ground black pepper

Spicy Tomato Dressing
Ingredients
- 4 tablespoons of tomato juice
- 1 tablespoon of balsamic vinegar
- 2 teaspoons of Worcestershire sauce
- 1 teaspoon of Dijon mustard
- Sweetener/cayenne pepper/dry chili flakes to taste
